Ciência e Tecnologia de Alimentos em interface com a Nutrição e Saúde. Compostos bioativos e microbiologia de alimentos, contemplando estudos das atividades biológicas, com ênfase na simulação da digestão gastrointestinal in vitro e na nanotecnologia aplicada a alimentos e à saúde.
